An anti-cookbook that reinvents the way we prepare and consume our food.

Year after year, cookbooks top the sales charts. Yet, it seems people have never cooked so little, leading one to believe that we consume the idea of the recipe more than we execute it! What if we decided to learn to cook differently?

In the era of climate change, in a context of growing social inequalities, resource depletion, and pandemic risks, we must explore new ways of producing, consuming, and cooking food. This book proposes an approach to unleash the culinary creator in each of us in order to adapt our diet based on greater seasonality and availability of food.

Far from any culinary dogma, Cuisiner sans recette (Cooking Without a Recipe) is a sort of anti-traditional cookbook that offers advice and techniques to develop good reflexes in the kitchen and promote our food autonomy. A first theoretical section presents the main principles guiding the approach, to take the recipe out of the ready-made thinking and ready-to-eat models, and to (re)discover the virtues of seasonality, local sourcing, and organic food. A second theoretical section aims to recall the fundamentals of nutrition, the basic principles to respect in the kitchen, and to present a few culinary techniques. On the menu: the basics of nutrition and healthy eating (nutrients), the seasonality and territoriality of foods, short-term preservation principles (organizing the fridge and pantry to avoid food waste) and long-term preservation (freezing, canning, lacto-fermentation, dehydration), meal organization and planning, kitchen layout, etc. A third practical section finally presents certain culinary themes and variations around thirty type-dishes, always with the concern of adapting to the seasons and the local terroir.

Far from being yet another recipe book, Cuisiner sans recette might very well be your last recipe book! The one that will push you to change your eating habits, provide you with the basic concepts to adapt your diet in all circumstances, and favor a diet that guarantees your health as well as that of workers, rural populations, and the environment. The ideal tool for developing your confidence, autonomy, and culinary creativity, and contributing to building a new food culture that is more ecological, supportive, resilient, and nourishing!
